Hamburger buns are the vessels that transport the delicious burger to your mouth and it’s time they got a little attention.  Finding ‘clean’ hamburger buns are hard enough but those that I’ve tried are dry and hard.  Not exactly the type of thing I want to eat.  While making your own hamburger buns does take time, it mostly takes patience.  The upside though is that you can double the recipe and make enough buns to freeze for later on!

Ingredients:

  • 3 cups whole wheat flour
  • 1 package yeast
  • 1 tsp sea salt
  • 2 tbsp brown rice syrup
  • 2 tbsp olive oil
  • 1 tbsp golden flaxseed, ground
  • 1 tbsp sesame seeds
  • 2 tbsp pumpkin seeds
  • 2 tbsp sunflower seeds

Preparation:

  1. Mix 1 3/4 cup warm water with flour and yeast in a medium bowl.

  2. Cover with saran wrap and let rise until mixture doubles in size, about 30 minutes.
  3. Combine remaining ingredients with dough and knead by hand until dough is sticky.
  4. Cover again and let rise for 30 minutes.
  5. Place sunflower seeds and pumpkin seeds in a plastic bag.  Using a rolling pin gently roll over the seeds a few times.  You’re not looking to crush them only break them up a little.
  6. In a small bowl mix place the sunflower and pumpkin seed mixture and add the flaxseeds and sesame seeds.  Stir well.
  7. Knead dough again.  Then select one of the following options:
    • To make a standard loaf place dough into a load pan and let rise for 1 hour
    • To make standard hamburger buns shape dough into 2 inch ovals.  Roll the dough onto a moisten towel and then roll in the seed mixture. Let rise for 1 hour
  8. Bake at 350 degrees for about 40 minutes for loaf and about 20 minutes for buns.

Notes:

For any of the unused buns I cut them in half and place them in freezer bags and toss in the freezer.  It’s important to cut them BEFORE freezing that way when you need them all you have to do is take them out of the freezer and place the 2 halves in a toaster or toaster oven and heat up!  No need to thaw!

If you’d like your hamburger buns without seeds simply omit the seeds from the recipe.  Continue following the recipe as stated.
