So, we know how great sea vegetables are but how do we use them? This is a really simple recipe that combines a wonderful mix of flavors. The sweet honey and sesame glaze balances great with the salty kombu and tart lemon. It’s a new year, why not try a new thing like nutritious and delicious Glazed Carrots and Kombu?!

Ingredients:

  • 4 medium sized carrots, cut into uniform chunks or 1 - 1 1/2 cups baby carrots
  • 1 piece (6 inches) kombu
  • 1 tsp sesame oil
  • 1/4 cup raw honey
  • 1 lemon, juiced plus 1 tsp zest
  • 2-3 tsp toasted sesame seeds

Preparation:

  1. Bring a medium sized sauce pan of water (about 4 cups) to a boil and add the kombu. Reduce heat to a simmer and cook 5-7 minutes. Remove from the water and cut into thin strips. Set aside.
  2. Place the carrots into the same water and cook until tender, about 5 minutes. Drain.
  3. Wipe the sauce pan dry and add the oil and honey. Bring to a boil and cook until just starting to foam. Turn off the heat.
  4. Add the lemon juice and zest, stir well.
  5. Add the carrots and kombu to the honey mixture. Stir to combine.
  6. Garnish with toasted sesame seeds.
