No week is complete in our household without Taco Tuesday.  We lay out all the ingredients potluck style and everyone piles on their favorites!


  • 8 ounces lean ground turkey breast (you can also use lean ground beef, tofu or your favorite beans), cooked and drained
  • 1 tbsp CLEAN taco seasoning mix (see recipe here)
  • 1/2 cup grated carrot and zucchini
  • 1/4 cup chopped onion
  • 1/2 cup shredded organic cheddar cheese (make sure you clearly read the ingredients so that you are purchasing CLEAN cheese. Remember cheddar cheese is white not yellow or orange so check out the label to avoid chemical dyes)
  • 1/4 cup yogurt cheese (see recipe here) or you can use your favorite hummus
  • 1/4 cup guacamole (see recipe here)
  • 6  whole wheat tortilla shells or similar wraps (our favorites are the Sprouted Grain Tortillas by Ezekiel 4.9 - they add such a great flavor!)
  • ground flaxseed and/or chia seeds (optional)


  1. After cooking and draining the turkey add the taco seasoning mix and a small amount of water. We like our turkey somewhat dry but if you like it with a ‘saucer’ sauce just add more water.
  2. Spread each wrap with two tablespoons yogurt cheese and guacamole.
  3. Top with ground turkey, carrots, zucchini, onions and cheese. Sprinkle some Ground Flaxseed and/or Chia Seeds on top.
  4. Wrap it all up and ENJOY!

When I make tacos for my family I always make extra meat.  I either freeze the leftovers or use them for Quesadilla or Nachos (recipes here and here).
