As Sarah discussed in her recipe for guacamole, avocado’s are a super food. I personally don’t like the taste of them but have found a way to get all that nutritional power in a yummy frozen chocolate treat.

Ingredients:

  • 1/2 cup pitted medjool dates, soaked
  • 1/2 cup pure maple syrup
  • 1 1/2 cups mashed avocado (3 avocados)
  • 1/2 cup unsweetened cocoa powder (If you are a dark chocolate fan like me, you can use Hershey’s special dark cocoa)

Preparation:

  1. Place the dates and maple syrup in a food processor and process until smooth.
  2. Add avocado and cocoa powder and process until creamy (If the mixture appears too thick you can add up to 1/2 cup water)
  3. You may have to occasionally stop and scrape down the sides of the bowl with a spatula.
  4. Spoon approximately 1/2 cup of the mixture into 4 freezer safe containers and place in the freezer for several hours . These will keep up to 2 weeks in the freezer (if they last that long).
  5. To serve, let the ice cream sit out for about 5-10 minutes and enjoy.

Notes:

To soak the dates, place them in a bowl with enough water to cover for 10-30 minutes. Drain well, pit and use immediately.
