I was browsing through a cookbook on grilling the other day looking for a gift and noticed a recipe for grilled romaine.  I did a double take, did I just see grilled romaine? As in romaine lettuce? Yup, it was. Turns out it’s pretty popular. This recipe had a blue cheese type dressing that was high in fat but I had been wanting to try a dressing I had been working on and thought it would go really well with this. It was so easy and so good. The dressing tasted amazing with the grilled romaine. With the capers and parmesan it was a little saltier than my usual daily intake but it was worth it and what a beautiful presentation this was with so little work.


  • 2 romaine hearts, split in half
  • 1/4 cup extra vigin olive oil plus 1 tablespoon to brush on romaine
  • 1/4 cup fresh squeezed lemon
  • 2-3 tbsp grated parmesan cheese
  • 1/2 tbsp stoneground mustard ( read the ingredients to be sure it’s clean - I use Organicville)
  • 1 tbsp capers
  • 1/2 clove garlic, minced
  • 1 roma tomato


  1. Preheat oven to 350.
  2. Line a baking sheet with foil.
  3. Drain the capers and place them on the foil. Cut the tomato in thin slices and place on the foil along with the capers and lightly mist just the tomatoes with olive oil. Bake in the oven for about 10 minutes or until the capers and tomatoes are dried and just starting to brown.

  4. Combine the oil, lemon juice, 2 tablespoons parmesan, mustard, garlic and roasted capers in a mini food processer and pulse a couple of times to mix ingredients together and to chop a few of the capers.
  5. Brush or mist the split romaine hearts with olive oil and place on a hot grill (either an outdoor grill or a grill pan on the stove will work fine).
  6. Grill over high heat until grill marks are formed and lettuce is just beginning to wilt.

  7. Remove from the grill and place on a plate. Drizzle the dressing over the romaine and top with the roasted tomatoes and the remaining parmesan cheese.
