Can you believe it’s March already???!!!  I swear it was just last week that we were digging ourselves out of 18 feet of snow that fell on us!  This week we are being greeted with temperatures in the 60′s and it’s putting me in the mood for some light and delicious ‘spring’ salads.  When Tiffany, over at The Gracious Pantry, offered up this recipe as a guest post it was just the salad I was looking for.  Doesn’t it look delicious?!  Here it is without further ado!

Spring is coming and there’s nothing like a light and healthy salad to get
the stale, winter blahs out of your cooking routine.

If you’re anything like me, you enjoy a good vegetarian meal as well.
Don’t get me wrong, I eat plenty of lean meats, but it’s definitely a good
thing to give up the carnivorous ways on occasion and enjoy some good ol’
veg!

This Edamame salad is packed with protein, but is light enough to enjoy
for any meal during the day.

So blast those cooking blahs out of the kitchen, and enjoy a fresh, light
salad to get your spring started off right!

Ingredients:

  • 2 grated carrots
  • 1 diced cucumber
  • 8 sliced eggs
  • 1/2 lb. shelled edamame beans
  • 1 medium diced tomato
  • Salt and pepper to taste

Preparation:

  1. Prepare all your ingredients.
  2. Put all ingredients in a bowl and toss.
  3. Add salt and pepper to taste.
  4. This is good without any dressing, but add come clean dressing if you like. This would be really tasty with some Clean Eating Ranch Dressing!
