Ok, admit it. You like chicken nuggets as much as your children do. The little bite size pieces are so fun to pop in your mouth and you can dip them in just about anything and get a whole new flavor. This recipe has a little more grown up flavor but you can adjust it for children by changing the amount or combination of seasonings to your child’s taste.

  • 1-2 pounds skinless boneless chicken breasts (about 3 breast halves), cut into nugget sized pieces (about 1 - 1 1/2 inches)
  • 1 egg
  • 1/2 - 1 tsp dry mustard
  • sea salt to taste
  • 1 tsp dried oregano (or thyme and rosemary)
  • 3/4 cup almond flour
  • 1/4 cup grated parmesan cheese
  • 3 tbsp extra virgin olive oil

  1. Heat the olive oil in a large skillet on medium heat.

Add the chicken pieces to the egg and mustard and mix to coat well

  2. In a medium bowl beat the egg and mustard. Add the chicken pieces and mix to coat well.
  3. In a pie plate or other flat dish mix the almond flour, parmesan cheese, oregano and salt to taste.

Dip each chicken piece into the flour mixture and fully coat

  4. Dip each chicken piece into the flour mixture and fully coat, then place directly into the pan with oil.

Fry about 5 minutes on each side or until golden brown

  5. Fry about 5 minutes on each side or until golden brown and cooked through.
  6. Remove from pan onto a serving plate. Serve with Clean Eating Ketchup (recipe here), Clean Eating Ranch Dressing (recipe here) or Clean Eating BBQ Sauce (recipe here) or honey mustard.

Great recipe idea. My kids ages 2 and 5 are difficult to please especially when it comes to healthy eating. This is a nice little quick recipe to make them a treat they are sure to enjoy. Thanks for posting!

      Thank you Tony,
I know how you feel about trying to please young children with healthy eating choices. My grandchildren are 2 of my toughest critics. Find the spices they like best and use those to flavor the coating and you should have great results. Good luck.~Kristy

Is this recipe Gluten free? I love chicken nuggets and was trying to find a way to make Clean eating chicken nuggets that were gluten free… Let me know.. Thank you! Love your Site!

      Thanks Jessica,
Yes, the nuggets are gluten free since the coating is made from ground almonds and there are no grains involved. As long as you don’t have any nut allergies these should be great for a gluten free diet. Happy nugget munching!~Kristy
