To say I love this salad is an understatement.  It’s tangy and flavorful and so delicious!  I could literally eat a bucket load at a time.  The hardest part of this recipe is waiting the 12-24 hours it takes to marinade.  Trust me, the wait is sooooo worth it!  It’s also super nutritious!  With both black beans and kidney beans you get a powerful dose of fiber, antioxidants and protein all in one delicious salad!


  • 1 can no salt added organic black beans, drained and rinsed
  • 1 can no salt added organic red kidney beans, drained and rinsed
  • 1/4 cup green pepper, finely diced
  • 1/2 cup onion, finely diced
  • 1/2 cup cucumber, finely diced
  • 3/4 cup organic sweet corn (can use fresh, frozen or canned)
  • 2 tbsp sunflower oil
  • 1/4 cup balsamic vinegar
  • 1/2 tsp sea salt
  • 3-4 tbsp fresh parsley, roughly chopped
  • 1-2 cloves garlic, minced
  • pepper to taste


  1. In a small bowl combine sunflower oil, vinegar, salt, parsley and garlic.  Stir well.
  2. In a large bowl or container (with a lid) combine the first 6 ingredients.  Add the oil mixture and stir to evenly coat the salad.

  3. Cover and place salad in the refrigerator for 12 - 24 hours.  Serve cold and ENJOY!

This salad can be kept in a sealed container in the fridge for up to a week.
