Each year OVER 200 MILLION boxes of Girl Scout cookies are sold in the U.S.  Have you ever looked at the ingredients in the cookies?  There are 6 different kinds of sugar listed for Caramel Delites - the second most popular cookie.  The truly sad thing - the bakers of Girl Scout cookies indicate that high fructose corn syrup is a necessary ingredient in ensuring the quality of the cookie.  Never fear!  Now you have a wholesome, natural and healthy treat that your whole family can enjoy.  My kids call these candy balls and they are their new favorite dessert.  Oh, and because they are nut free they are a great option for kids that have a nut free policy at school.  And did I mention that they taste fanfreakingtastic?!  You should make them rightthissecond.  You can thank me later!

Ingredients:

Preparation:
  1. Place the dates, 2 tbsp coconut, vanilla and salt into a food processor and blend until a you have a grainy consistency.
  2. Add the chocolate chips and pulse a few times just until the chips are broken apart.
  3. Remove the mixture from the food processor and using the palms of your hands roll into five or six 1 inch truffle balls.
  4. Roll each truffle into the remaining coconut and refrigerate until ready to serve.

Notes:

Any leftover truffles should be stored in an airtight container in the fridge for up to 7 days.
