Clean Eating So Easy Applesauce

This applesauce is so easy it’s not even a recipe. I love applesauce. Not the kind you buy at the store but real applesauce. Just about any apple will work  A few of my favorites are Fuji, Honey Crisp, Ginger Gold, Spartan, Crispin(Mutsu) and Empire though Red Delicious is not so good for sauce - too watery. I like to mix varieties to get a combination of flavor and texture. I know there are a lot of recipes for applesauce....

Clean Eating Banana Bread

Banana bread, the ol’ standby for what to do with over ripe bananas. This banana bread is so good that you won’t be able to wait for those bananas to turn dark and spotty. To keep this bread clean I’ve used date sugar as the sweetener. The result is a dark, moist and flavorful sweet bread that is good for breakfast or as a snack. Just top with a little Delicious Fruit Dip (see recipe here) or do an “Elvis” and spread...

Clean Eating Oatmeal Raisin Walnut Cookies

Cookies have long been my dessert of choice.  Little round circles of yumminess!  Thankfully my family is full of cookie lovers as well since I tend to make them often.  I love experimenting with new textures and flavors and this recipe is no exception.  I wanted something hearty yet low in fat and calories.  Here is the winner! Ingredients: 1 cup apple butter (see recipe here) 1 1/2 cups date sugar 1 egg 1/4 cup water 2 tsp vanilla 1 1/2 -...

Clean Eating Pumplings

What are pumplings you ask? They are the name my son in law gave to the last entry in the Thanksgiving with a Twist…. pumpkin dumplings (he’s so ingenious). I love pumpkin. My recipe collection is full of pumpkin recipes, like, pumpkin beverages, pancakes, muffins, soups, breads, risottos, pastas, desserts and even pumpkin dog treats. You name it, I have it or I want it! I love this time of year because every magazine you pick up has...

Clean Eating Fruit and Nut Truffles

When I hear truffles I think soft, melting chocolate confections. What I have here are not that classic kind of truffle but they are a soft, melt in your mouth sweetness that can be rolled in cocoa powder or even drizzled with melted chocolate and will make you think you are eating a piece of forbidden fruit. The best part is that they are not forbidden as they contain only fruit, nuts and spice.  I have three varieties made with classic...

Clean Eating Apple and Pear Tart

Let me come clean right now - pastries and desserts are NOT my strong suit.  I can make a mean cookie or cupcake but I struggle with just about anything else.  Not that I don’t love desserts cause I do!  I’m just not very good at making them.  So when I tell you that this is such an easy and simple dessert to make you have to know that if I can make it so can you!  You can also substitute your favorite fruit in place of the...

Clean Eating Caleb’s Chocolate Cupcakes

My grandson Caleb loves chocolate. He’s a lot like his mommy in that regard. He loves chocolate milk, chocolate banana bread, chocolate zucchini muffins (recipe coming soon), chocolate pudding (I’ve tried 3 different recipes and failed to get his blessing - so far), and chocolate cupcakes. Here is the recipe for Caleb approved chocolate cupcakes. Ingredients for Cupcakes: 1 cup unsweetened cocoa powder 1 1/4 cup date sugar ¼...

Clean Eating Roasted Pears

I’ve always liked pears, just never loved them like I do other fruit.  But when I saw these Asian pears at my local market they were too beautiful to pass up!  Since I had no idea what I was going to do with the pears, I figured I should try a little first and maybe it would give me an idea.  HOLY GOODNESS!  This is now one of my favorite fruits!  It’s got a crisp, sweet juicy flavor that is unlike anything I’ve tasted before. ...

Clean Eating Carrot Cake Cupcakes with Honey Yogurt Frosting

The first time I had carrot cake was at the Boat House restaurant (does it still exist?) in San Diego, CA. With so many tempting chocolate choices to choose from, why would I want carrot cake? But, the waiter convinced me they were a customer favorite so I tried it, and….I was hooked (no pun intended - get it? Boat House restaurant - hooked?). Anyway, this is my clean version, still dense, moist and spicy and the topping is still...

Clean Eating Decadent Chocolate Ice Cream

As Sarah discussed in her recipe for guacamole, avocado’s are a super food. I personally don’t like the taste of them but have found a way to get all that nutritional power in a yummy frozen chocolate treat. Ingredients: 1/2 cup pitted medjool dates, soaked 1/2 cup pure maple syrup 1 1/2 cups mashed avocado (3 avocados) 1/2 cup unsweetened cocoa powder (If you are a dark chocolate fan like me, you can use Hershey’s special dark...
