I really like baked polenta or even more, polenta made on a grill pan (see notes). It’s such a nice alternative to the usual bread roll or biscuit. I especially like this polenta because it’s made from quinoa so it’s a good protein source that can go from a side to the main course. Add to that, sweet potato and now your talking! My grandchildren Caleb and Keegan are my best Valentines. They fill my heart with joy and I am so grateful that I am able to be a part of their lives. Quite a few years back there used to be this boxed snack cake mix that came with a plastic baking pan and a cake mix that you just had to add water to right in the baking pan, microwave and “beep, beep, beep” 2 minutes later you had an instant single serving of cake. The last few weeks I’ve gone through a LOT of different protein powders. The Urban Dictionary defines nom nom as ”the sound made when someone is eating or chewing something and really enjoying it”. I call this dish Nom N’omelet because it will have you making just this sound.
