Bulgar and Leek Salad

Bulgar and Leek Salad

Fall is hands down my favorite season.  In fact my husband and I would have gotten married just weeks after knowing each other if it weren’t for the fact that we wanted to get married in the fall.  This fall will be our first one spent in Southern California.  I’m not sure how I will cope.  I’m already starting to have withdrawals.  No leaves turning color, no fall smells (can someone please bottle up some of that delicious...

Spaghetti Squash Primavera

This recipe is perfect for the late summer harvest of vegetables, especially squash. I used 3 different kinds of squash because they are so plentiful right now. You can use whatever vegetables you have on hand, there really is no right or wrong way to make this dish. Being a cheese lover my favorite part about this dish is spooning up a serving and having the melty, stringy mozzarella cheese hanging from the spoon as you move it to your plate. Mmmmm....

Kale Salad with Roasted Red Pepper Dressing

Kale Salad with Roasted Red Pepper Dressing

I love salad and have often thought about challenging myself to a “year of salads”.  A new salad every day for a year. There are so many combinations of vegetables, fruits, proteins, nuts and seeds. It wouldn’t really be that hard to mix up different combinations each day but for me what really makes a salad is the dressing. There are lazy days where I just drizzle olive oil and balsamic vinegar over my salad ingredients and call...

Mango Couscous Salad

Lately I’ve been having the breakfast blahs.  See, I’m not an oatmeal person.  In fact oatmeal really creeps me out.  I don’t know if it’s the mushy part or gloopy part or what but it’s just not gonna happen for me.  It’s not that I haven’t tried to like oatmeal, I have!  I’ve added blueberries, strawberries, peanut butter, all sorts of yummy things to it and I still can’t get myself to eat...

Flatbread Pizza

Chicken and Veggie Flatbread Pizza I think, quite possibly I could eat this pizza everyday for the rest of my life.  No joke. Cause let’s be honest, what time of the day isn’t a good time for pizza? Mushroom Pesto Flatbread Pizza Breakfast - Yes Please!  Lunch - Sign Me Up!  Dinner - AB-SA-MA-LUT-LY! What?  You haven’t jumped on the cold pizza for breakfast bandwagon? BBQ Chicken Flatbread Pizza C’mon!...

Curried Kuri Squash Soup

You know me, I have to try new things. With the approach of fall (sigh) there have been many interesting new varieties of squash at the market. I picked up this Red Kuri squash and thought what could be better than curried Kuri? This soup can be made 2 ways. Once the squash is tender you can stop at that point and add cooked chicken and serve it as a chunky style soup. I prefer to leave out the chicken and puree the soup and serve it smooth with...

Honeydew Melon Soup

I’m going to be having some guests staying with me in a few weeks so I’ve been going through my recipes doing a little menu planning. I came across this simple and tasty soup recipe and knew it would be a perfect addition. It’s so simple yet very elegant. It can be made ahead of time and with melons in season that’s a win-win. I found a Piel de Sapo on sale at the market. I had never had this variety before. Piel de Sapo...

Panzanella Salad

When I was younger the running joke in my family was ”would you like to have some salad with your croutons”?  To this day I still LOVE croutons but I only use my Homemade Croutons - store bought croutons are almost always filled with preservatives and added sugars, YUCK!  Now, I don’t even like tomatoes but I loved this salad.  The bread chunks soak up tons of flavor and remind me of croutons on a salad.  The cucumber...

Summer Gazpacho Soup

I can’t believe that summer is almost over!  I’m not ready!!!!!!!!  I know fall brings a whole new selection of seasonal fruits and vegetables that I love but I’m still not ready to say goodbye to summer.  One of my favorite blogs, Nature Insider, featured a recipe for a Raw White Gazpacho Soup and I thought it sounded like the perfect summer soup.  I played around with the recipe and ended up with a delicious chilled soup that...

Ricotta Stuffed Zucchini Rolls

I love to rearrange my furniture. You can get a whole new look using the same items just by placing them differently. You can do the same thing with food. Take some basic ingredients, put them together in a different arrangement and it’s a whole new look and taste. Zucchini is a perfect example of this. This time of year you might be getting pretty tired of looking at and eating this same old summer staple but roll it up around some sun dried...
